The gin is made using nine botanicals including fresh lime and pink grapefruit peels, as well as local lavender and bay leaf. The expression of the traditional London dry style comes from the maceration into pure wheat spirit of juniper, coriander and angelica root, which have been left for 12 hours to allow their flavour characteristics to fully infuse. Tough work, but totally worth it for the vibrant flavours and rich mouthfeel that make Cotswold Gin stand out from the crowd.
