The pastry is quite involved, I often just make some shortcrust pastry with a teaspoon of mustard in.

I would rather have a vegetarian cookery book not include cakes and biscuits though as they are nearly always vegetarian so it seems a bit pointless, I would rather see them in a book of just cakes and biscuits but that's a personal preference. Use your hands to form the dough into a ball and chill in the fridge for at least half an hour, although you can make this up to 24 hours in advance.

The same goes for the vegan sausage roll from my favourite local bakery, the Sunflour on north London’s Caledonian Road, which also seems to contain leek, plus shredded carrot and possibly potato, plus garlic: it’s very tasty, but it’s not festive. Used bought puff pastry and for filling down the middle I put cooked onion,garlic,peppers,mushrooms,herbs,cheese and a small amount of drained tinned tomatoes so it wasn’t too dry.
