The General Wine Company is a family-owned and operated wine merchant in Liphook, Hampshire, England. Created by the dream for a new type of whisky of Keizo Saji, the second master blender, the unique taste made in distinct four seasons in high altitude is praised by the most curious whisky connoisseurs and lovers of gastronomy. He masterfully brings together hand selected barrels of varying ages and levels of peaty intensity to create a stunning whisky which is both bright and vibrant with layers of fruity complexity.

Both lightly-peated and heavily-peated malts were used for this complex and deeply enjoyable whisky from Suntory. Hakushu East is the whisky-producing arm and was built in 1981 while the original building, Hakushu ‘West’, is now used for other purposes.

Keizo Saji, the second Master Blender, inherited his father’s quest to push the boundaries of what a Japanese whisky could be. With four distinctive seasons, the clear air and cool, humid climate of Hakushu’s vast forests allow the distillery, one of the few situated at an elevation of 700 meters or more, to produce high-quality whisky through a slow, unhurried process. Inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different from those of Scotland. The core range includes Distiller’s Reserve, the Hakushu 12 year old, Hakushu 18 year old, and Hakushu 25 year old.

The Hakushu Distillery is one of the highest distilleries in the world, standing at 2,300 feet above sea level – more than twice the altitude of Scotland’s highest distillery. A light peat combined with moist forest floor, bamboo, grass, but more warm than bitter and a pinch of anise and tarragon. At fermentation, artisanal craftsmen use wooden washbacks to encourage maturation by retaining heat in the cool air at the distillery. It's a concept rich in meaning the world over, but particularly in Japan where respect for tradition and reinvention sparks a powerful creative energy. Keizo Saji inherited his father’s vision in his quest for innovation and constructed this second Suntory distillery in 1973.
