See, to my mind a tasty vegan recipe (or any recipe for that matter) relies on a careful layering of flavours and textures that play off each other. Sara Wednesday, July 25, 2018 I don’t think I’ve ever posted a comment on a blog before but I wanted to let you know that I LOVE this recipe. If you’re after health food, a fishy assam laksa is probably a better bet, and seasoned according to whim: Yin, Musa and Tan all add sugar as well as salt and pepper, but taste it and see what works for you.

While you can purchase pre-made, jarred laksa paste and add a pat to your coconut broth, we strongly recommend trying our homemade laksa recipe instead. The Chilli Paste is made with more than just chilli and I’ve never come across a recipe for it so I made my own up.

In creating this recipe, I went against Duncan’s wisdom to keep things simple and I am hoping you’ll see that it’s worth it. If you opt to use this ingredient, substitute 1 teaspoon of the paste per tablespoon of Oyster Sauce.

Add the vermicelli noodles, shredded chicken, egg, shrimp, tofu puffs, bean sprouts, cucumbers to a large serving bowl. Cook dry rice noodles according to directions on the package or use fresh rice noodles that can be purchased at the Asian market -just dip them in boiling water for 30 seconds to heat them up before serving. For all of those enthusiasts who are motivated to make fresh laksa paste, I recommend doubling the recipe.

For the paste I submitted the lemongrass with lime leaves, and added a bit of fish sauce as I didn’t have dried shrimps. You’ll need to get big prawns for this, unless you do better than me at finding smaller raw ones with their shells still on, and I’d shell them and blanch the meat separately, rather than simmering them whole for half an hour as some recipes do – it makes them very tough and woolly.Do not boil this too long or you will lose the lovely sweetness from the coconut milk- just gently warm. I never thought to try and make it at home until last year when UK Chef and TV personality Nigella Lawson shared the picture of Laksa Soup she had in a London restaurant. Indonesian Cabe Merah peppers are used in traditional Laksa pastes, but they can be challenging to find. I’m surprised that there is no one standard noodle used for laksa: egg noodles, rice sticks, vermicelli and glass noodles all feature in the recipes I try. Add your choice of protein to the flavorful coconut broth, then ladle it over fresh rice noodles, top with a handful of crunchy bean sprouts, fresh cilantro, and mint, and serve with lime wedges.

The BBC published an article today here in the UK about laksa being the favourite meal in Darwin – so I hunted for the recipe and found you. The other important part of making laksa is balancing the three seasonings: lime juice, fish sauce and brown sugar.

I've suggested you start with a tablespoon of each, then taste and adjust until you hit the balance that suits you. However, there are actually quite a few different types of Laksas and those who travel to Malaysia are often surprised to learn that the most popular Laksa has a much stronger curry flavour and is not made with a coconut broth.
