About this deal

It is a common practice to store Tequila in the freezer as its alcohol content prevents it from freezing. I am enjoying the first encounter, still tasting the agave but also a bit of smoke. I wonder if it's the char from the barrels or if the piñas were smoke cooked (vs. steamed) like with mezcal. Slight pleasant spiciness/bite/nip but no harshness (not solventy, no acetone/super glue notes you get with young bourbons). It's woody, but seems like the casks are of good quality - there is no palate-saturating heavy tannin astringency that you get if sipping a cheap blend (JW Red Label) that was aged in tired casks. A delicately-flavoured Tequila with aromatic overtones of white pepper, smoke and vanilla. This has the smooth and sweet, agave essence of a fine Tequila, with the characteristic oaky undertone of a well-aged Tequila. The 1800 Reserva is a smooth Tequila, although a little high in proof for our money. It has a subtle oakyness and vanilla undertones.

I like that I can really see the contents of the bottle, and that it isn’t obscured or masked by a giant label. Especially with something this dark and beautiful (artificial coloring notwithstanding), being able to see the spirit through the glass is something I appreciate. Distillers are not required to disclose the use of additives in Tequila as long as they do not exceed 1% of the total content.

However, the overpowering oak diminishes its balance, making it more akin to a French cognac than a Tequila. Once the fermentation is complete, what remains is a mildly alcoholic liquid that isn’t nearly pure or strong enough to be tequila. The next step in the process is to distill that spirit twice in copper pot stills to concentrate the spirits and raise the alcohol level.
