About this deal

From one of only a couple distilleries in making gin in Ireland, they’ve come to making gin and vodka in the meantime while their flagship whiskey is given the time it needs to age [due for release, by the way, this year]. Dingle Gin’s botanicals are distilled in two steps, some are macerated for 24 hours before distillation, and the others are suspended in a gin basket. Their unique blend of botanicals that calls to mind the Irish landscape actually has a lot of overlap with other brands, particularly Scottish brands, with Rowan Berry, Bog Myrtle, and Heather set amidst some of the traditional juniper, angelica and coriander. Cut with local water, Dingle Gin is produced in small batches to be traditional and Irish all at the same time. Tasting Notes This fourth, small batch release of Single Pot Still Irish Whiskey brings this marriage of Bourbon and Oloroso casks together with an intense richness and a rush of spice. Tones of dark fruits and figs are followed by dark chocolate with a sprinkling of roasted, chopped nuts. The chocolate gives way to returning spice of soft wood and leather notes which glide you into a long, memorable finish.

Infused with the unique flavors of rowan berry, fuschia, bog myrtle, hawthorn, and heather, Dingle Dry Gin encapsulates the essence of its natural surroundings. As you take a sip, you're enveloped by the intricate tapestry of botanicals, each chosen to reflect the diverse flora that graces the landscape around the distillery. The Dingle Whiskey Distillery was crafted and conceived by three independent spirits: Oliver Hughes; Liam LaHart and Peter Mosley. Oliver, Liam and Peter are the people behind Porterhouse Brewing Company; one of the pioneers of craft brewing in Ireland in 1996. Craft beer in Ireland in the mid-1990s was not appealing to the masses. The idea was radical to some, simply mad to the rest. The refined pallets of the then youthful Oliver, Liam and Peter had seen a love for beer. As their palates became more and more experienced to the taste of Earth’s natural ingredients, the attention turned to whiskey.There is also a series of limited edition whiskies in homage to the Celtic cycle of the year. Collaborating with local sea foragers, land foragers, chefs and fishermen, Skellig Six18 selected a range of local botanicals that include birch sap, fresh Douglas fir needles, yarrow and a pinch of dillisk foraged from nearby Derrynane beach. The Echlinville Distillery in Co Down was Northern Ireland’s first licensed distillery in more than 125 years. It produced its first spirit in 2013. It is owned by Shane Braniff and is based on the historic Echlinville estate, founded by the influential family of that name in the 1730s.

This fresh and fruity spirit is produced in small batches with bilberry, ox eye daisy, pine needles, watermint, sloe fruit, woodruff and rose. If you happen to crave even more rose in your Irish gin, Glendalough Distillery also produces a rose-rich expression. A variety of spirits is produced here, including Jawbox Gin, Echlinville Pot Stil Gin, Bán Poitín, Dunville’s Irish Whiskey and several liquors. These are genuine field-to-glass spirits made from barley grown in the fields surrounding the distillery. Echlinville has also revived the age-old tradition of distillery floor malting. It is full of spice and quite sweet on the nose. The pot still oils carry a lively mix of rich sweetness and peppery spice. These rich spry flavours bristle across thetongue,dark chocolate, dried fruits, some biscuit and hints of ginger, raisins and salted caramel and last on the palate long after the liquid is gone. Aiteal is distilled using fresh Irish juniper and Irish whey spirit, making it the only 100 per cent Irish gin. The word “aiteal” is the Irish for juniper. This is one of the few juniper-only gins produced worldwide.
