The perfect summertime drink with still or sparkling water (the latter for elderflower pressé) and/or a dash of gin. Alternatively, added to wine or champagne. This recipe doesn’t require citric acid. The story behind the recipe Ideally you want to time this with finishing your cordial. As you are simmering your elderflower water with sugar, put your bottles in the oven and then will be ready by the time you need them. It is really simple to make elderflower cordial but if you’ve been looking around for recipes you might have found that most contain citric acid? My own particular favourite is elderflower champagne. Citric acid is a preservative and is naturally found in lemons and other citrus fruits. It brings a lot of tang! to the cordial and has a role in extracting the flavour from the elderflowers. It’s also what helps the cordial to preserve for so long. Where to get citric acid Gather the corners together and squeeze the whole thing out so that you only have a pure, yellow-y liquid remaining in the bowl.

Typically, in the South of England, trees are in bloom mid may to mid June. Blooming time will vary according to location and the weather.
