Mezcal is made from roasting the hearts ‘piñas’ of the agave plants in underground pits for 3-5 days, giving it its smoky flavours. Aged for 13 months in a blend of American and French oak barrels with flavours including maple, clove, and bitter orange aromas, and dark chocolate and sweet agave on the palate.
