Originally Andy made just one cheese in the shape of a bomb and gave it to a friend who was emigrating to America (what the American immigration officials thought about this who knows! Croquettes often use mozzarella, but traditional British croquettes use Lancashire cheese so here’s a version using Shorrock’s Lancashire Bomb. At time of writing the other flavours include smoked, chilli, black pepper, garlic, red onion and whiskey! It has proven to be a great success in the North of England and is spreading South rapidly by word of mouth due to the great taste and originality of the product.
