We test how quickly the machine makes espresso, how hot the coffee is and how well it froths milk, if the coffee machine comes with a milk frothing system. If you're going to do this properly you really need to spend a bit of time on it if you're using a single needle or paperclip, but there are tools you can use so that you're using multiple pointy things at the same time, to speed things up. Also, I'm guessing that you either don't currently have the budget for an entry-level home barista machine, or can't justify the cost (to yourself, or to your better half) and spending the best part of a couple of hundred quid is about your limit at the moment.
